Pesto Recipe Do you ever just feel like having something homemade, not from a can or the farmer’s market, or even the local Italian butcher down the street?? Well, since I got an amazing food processor I feel like this ALL the time. Last night, I perfected my own pesto recipe. Here it is…as you will see it is very simple, and very tasty.
Simple, Amazing Pesto
- 1/4 cup walnuts
- 1/4 cup pine nuts
- 6 medium-size cloves garlic
- 5 cups fresh basil leaves, packed
- 1 ½ teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup extra virgin olive oil
- 1 cup freshly grated Parmesan
Place the walnuts, pine nuts and garlic in the bowl of a food processor and process for 30 seconds. Add basil leaves, salt, and pepper. While processing, add olive oil slowly. Puree for one minute. I usually serve half the pesto with Fusilli and freeze the other half.
