The BEST Corn I Have Ever Had

Well readers, it’s officially fall. And you know what that means! Corn?

As I mentioned in my previous post, fall veggies are on their way. What better way to celebrate than with an incredibly amazing, succulent, salty, spicy, crispy corn dish? Is your mouth watering yet? Because I’m just getting started. 

Spicy Crunchy Sauteed Corn (adapted from

3 Tbsp. salted butter
Kernels from 3-4 ears fresh corn
1 TBSP white onion, thinly sliced
1 jalapeno pepper, seeds removed if desired, minced
Lemon juice from 1 wedge lemon

Heat the butter in a large skillet over medium-high until bubbling. Add the corn, onion, and jalapeno, stirring to coat with butter. Cook, stirring occasionally, until the corn begins to brown and stick to the bottom of the pan, about 10 minutes. Remove from the heat, and stir in the lemon juice. Enjoy immediately.

Yield: 4 side-dish servings
