Chicken Soup For The Soul

With Christmas just around the corner, I like to make myself healthy dinners so that we don’t feel guilty when we splurge on Christmas Eve and Christmas! Last week I made a delicious and incredibly healthy chicken soup, and I truly believe it is for the soul!! Enjoy. And remember, if you eat well this week, you can let loose this weekend!!!

Shredded chicken adds protein and immense flavour

There can be many variations of this soup, but this is what I did:

Ingredients:
– 1 chicken
– 3 carrots (peeled and chopped)
– 3 celery stocks (chopped)
– 1 head of brocolli (chopped)
– salt/pepper
– 1 small onion, chopped
– 1 tbsp of “it’s better than boullion” or chicken stock
– water
– 2 tbsp olive oil

Instructions:
– Heat olive oil over medium heat
– Add onion
– Add all ingredients, with water 3/4 up the chicken
– Bring to boil
– Simmer for 1.5 hours
– Remove chicken, shred it, add it back in
– Season with salt and pepper to taste
