Do you ever have that feeling that you have been eating too much bad food for too long? Whenever I feel that way, I turn to greens, and more specifically kale. I absolutely love the taste of kale, but I especially love it when it tastes like potato chips.
This recipe is easy (3 ingredients: kale, olive oil, and salt) and is a perfect complement to any dish you are eating, or even on the side of a cheese plate.

|extra virgin olive oil|
4 side servings
2 bunches of kale
Heat oven to 375.
Thoroughly wash and dry your kale. It is important that it is very dry so it can crisp up.
Tear into manageable pieces and place on baking sheet.
Drizzle with olive oil and top with a pinch of salt. Toss.
Bake for 12 minutes, removing any pieces that crisp up quicker than others. Continue monitoring until all kale is crispy.
Enjoy for up to a few days in an airtight container.
