Parmesan Roasted Carrots

I often begin thinking about what I’m going to make for dinner when I wake up in the morning. If it’s sunny, I tend to gravitate towards fresh citrus (think Mexican food) and raw veggies alongside chips and guacamole. When it’s raining out, the first thing I think of making is a nice bowl of pasta, or even a beef stew. We all know that we can’t eat like that everyday, so here is a recipe for those days when you want something hearty, and something healthy at the same time.

Parmesan-Roasted Carrots
Yields 6 side-servings

1 pound carrots, sliced or chopped into “fry size” portions
2 tsp. olive oil
Freshly grated parmesan to top the carrots with

Preheat oven to 375.
Toss carrots in olive oil and a pinch of salt.
Cook carrots in oven for about 15 minutes, or until just caramelized.
Top with parmesan and serve immediately.
