Quinoa Burgers

I have to admit that I am not the biggest fan of quinoa, specifically in place of rice or pasta. I understand it’s benefits, however, and was determined to find a way to work it into my diet. I researched a few recipes and came up with a great quinoa burger recipe! As a friend pointed out, they greatly resemble the Jewish delicacy latkes (which I love). They are a healthy alternative to meat as they are packed with protein and essential ameno acids.

Quinoa Burgers
makes about 12

2 C cooked quinoa
3/4 C shredded cheese
1/2 C low-fat cottage cheese or sour cream
1 carrot, finely grated
3 eggs
3 tbsp all purpose flour
2 green onions, chopped
1 /2 tsp sugar
1/4 tsp black pepper
1/4 tsp ground cumin (or any spice you love – curry powder would be delicious)
1/8 tsp salt
1 or 2 garlic cloves, minced
Olive oil for frying (1 or 2 tbsp)
Add all ingredients except olive oil and mix.
Heat olive oil over medium heat.
Use a 1/4 dry measuring cup and place each patty on the pan. Flatten with a spatula.
Flip after 5 minutes until patties are golden brown on each side.
