There is something so refreshing about a simple green salad. I often enjoy one before a heavier meal such as pasta, or sometimes if I’m watching what I eat closely, I add sauteed mushrooms or a protein. Either way, there is no reason you won’t feel light, energized, and happy after devouring this salad.

Red Lettuce and Red Wine Vinaigrette
Serves 4 appetizer portion
1 head of red leaf lettuce, cleaned and dried thoroughly and ripped up into bite-size pieces
2 tbsp red wine vinegar
1 tbsp fresh squeezed lemon juice
1/2 tsp honey
pinch of ground black pepepr
1/4 C extra-virgin olive oil
Mix all dressing ingredients together except olive oil. While whisking (or in a food processor) slowly add the olive oil to emulsify.
Mix all ingredients together.
