One of my favourite parts about summer is the simplicity of barbequing your food. There is no advanced planning required, the cooking usually takes under 10 minutes, and the food ends up being amazingly flavourful. For our last dinner party, Peter (our resident BBQ master) tossed some peppers, broccoli and asparagus in olive oil, sea salt, and pepper and barbequed them to perfection.

Simple BBQ Shrimp
Makes enough appetizers for 8-10 people
1. Deshell and de-vein jumbo prawns.
2. 20 minutes before cooking, add prawns, a little olive oil, salt, squeeze of lemon and crushed garlic to bowl.
3. Toss to coat.
4. Skewer on bamboo sticks.
5. Cook for 1-2 minutes per side (make sure they are pink)
6. Serve with BBQ’d lemon wedges.
