Yesterday was a perfect Hawaiian day. It started off with a 2 hour surf lesson followed by a relaxing snooze on the beach. The surf lesson really worked up our appetites, so we headed into town for some delicious food.
We’ve only been in Hawaii for 2 days and I’ve already eaten at Coconut’s Fish Cafe twice. Voted “best fish taco in America,” this tiny little cafe serves up fresh food 7 days a week with impeccably friendly service. The food is not only cooked to order with the most delectable ingredients, but it is so flavourful and leaves you pleasantly full. The fish tacos have “17 different flavours,” and while impossible to eat all in one bite, each is just as fresh and delicious as the last. They make everything (except ketchup) in house and are constantly busy, but always attentive. If you’re ever on Maui, check it out! I will absolutely be trying to replicate the taco at home with a little secret I learned: in order to make their coleslaw creamy, yet healthy, they use coconut milk. Without being overly “coconut-y” the milk provides the texture of mayonnaise, but the lightness of a vinaigrette.
