Muffins are one of those things that are so versatile: you can have a small one for dessert in lieu of a cupcake, at breakfast on busy mornings, and as a snack during the day. I wanted to find a recipe that I could eat guilt-free, that had some extra nutritional value. Upon discovering a new blog, Skinnytaste, I knew I had found a great recipe. With applesauce instead of fats, and oats instead of most of the flour, these muffins are healthy enough to have two of!
