Yesterday, I posted a great recipe for chicken lettuce cups. I highly suggest you make those ASAP, and if you do, here is a great side dish for them. I love ordering greens at a Chinese restaurant – they’re always full of flavour, but somehow light and crisp. This at-home version is easy and a lot healthier than what you order in restaurants, and can be made with most ingredients you already have at home. I would top some delicious rice with this for an easy meal, or serve it alongside your favourite grilled fish or meat.
Bok Choy with Garlic and Ginger
Serves 2, as a side
2 tbsp olive oil
2 garlic cloves, sliced
1/4 tsp ground ginger
1 lb bok choy, cleaned
1/2 cup water
2 tsp soy sauce
1 tsp fish sauce
pinch of sea salt
1) Heat olive oil over medium heat. When hot, saute garlic and ginger.
2) Add bok choy and water. Cook for a few minutes on high heat)
3) Add soy sauce, fish sauce, and salt.
4) Serve immediately.
