Simple Salad

This salad recipe is one of my favourites. It can be made with any type of lettuce, only requires a few ingredients, and is the perfect accompaniment to any side. For Sunday Night Dinner, I served it alongside a roast chicken with potatoes and it made for a light side after devouring a nice big cheese board. It’s great to keep the sides light so people can also enjoy desert (recipe coming tomorrow!) I hope you’ve had a great week so far, and remember it’s almost the weekend! Simple Salad
Serves 4 as a side

1 head of romaine
1 head of iceberg lettuce
OR any salad you have on hand, enough for four handfuls
thin slices of onion (optional)
2 tsp red wine vinegar
1 tbsp olive oil
pinch of salt

1) Wash and dry (very well) the lettuces. I usually do this in advance and put them in the fridge for a few minutes with a paper towel to crisp them up again.
2) Toss with red wine vinegar and olive oil, and salt to taste.
3) Serve immediately.

This will go well with the 8th Generation Pinot Noir due to the flavours of the red wine vinegar…other vinegars may be too harsh for that wine.
