Grilled Herb Corn

One of my favourite things to have in the summer, other than tomatoes of course, is corn. Even better? Corn grilled on the grill with a char on the outside, slathered in herbs and butter. It’s the perfect side for burgers, meat, or even a healthy salad. This side is so easy to make, and the extra herb butter can be saved for a savoury sandwich, or tomatoes/avocado on toast!

Grilled Herb Corn
Serves 4

4 ears of corn, shucked and cleaned
1/2 stick of salted butter, softened by leaving out
1 tbsp basil, chopped
1 tbsp parsley, chopped
1 tbsp celery and leaves, chopped

1) Add herbs to softened butter. Roll into a log and wrap and place in the fridge.
2) Heat grill to medium high.
3) Place corn on grill, moving around for about 10 minutes until charred and cooked.
4) Slather in herb butter and serve immediately.
